Spécialité de Pau, les Coucougnettes du Vert Galant sont un hommage gourmand et polisson au bon roi Henri IV à qui les historiens attribuent 57 maîtresses et 24 enfants. C’est une amande grillée chocolatée enrobée de pâte d’amande aromatisée à la framboise, gingembre et armagnac, puis candie au sucre de canne blanc.
